Vegetable Peanut Noodles 1 cup of Peanut butter 1/2 - 1 cup of boiling water 1 Lime, juiced 1 teaspoon of Cayenne 1 tablespoon of rice wine vinegar Salt 8 ounces of Linguine 2 Carrots, sliced 1 Broccoli, cut florets 1/2 cup of roasted peanuts, chopped 2 Scallions, thinly sliced 1/2 cup of Cilantro, chopped

Instructions: Whisk peanut butter and boiling water; whisk in lime juice, cayenne, and vinegar. Cook linguine 5 minutes. Add carrots to boiling water and cook 2 minutes. Stir in broccoli and cook 4 minutes more. Drain linguine and vegetables and transfer to large bowl. Pour peanut sauce over linguine and vegetables and toss to coat.
