Sugarless Applesauce Cake

1 cup of raisins
1 cup of diced dried fruit
2 cups of water
2 cups of flour
1 teaspoon of baking soda
1/2 teaspoon of salt
1/2 teaspoon of nutmeg
1 1/2 teaspoon of cinnamon
2 eggs
1 cup of unsweetened applesauce
2 tablespoons of liquid sweetener
3/4 cup of vegetable oil
1 teaspoon of vanilla
1/2 cup of chopped nuts

Combine raisins and fruit with water. Cook uncovered until soft and water is evaporated. Cool. Combine flour, soda, salt and spices. In bowl, combine eggs, applesauce, sweetener, oil and vanilla. Add nuts and fruit mixture Stir into dry ingredients and blend thoroughly. Pour into greased 10-inch tube pan. Bake at 350ºF.  for 35-40 minutes or until tests done. 125 calories per serving.
