Feathery Fudge Cake
2/3 cup of soft butter or margarine
1 3/4 cup of sugar
2 eggs
1 teaspoon of vanilla
2 1/2 (1 ounce) squares of unsweetened chocolate, melted and cooked
2 1/2 cups of sifted cake flour
1 1/4 teaspoon of soda
1/2 teaspoon of salt
1 1 1/4 cup of ice water
Instructions:
Cream together, butte, sugar, eggs and vanilla until fluffy
(beat 5 minutes at high speed on mixer, scraping bowl
occasionally to guide batter into beaters or beat for 5 minutes
by hand.) Blend in chocolate. Sift flour with soda and salt, add
to creamed mixture alternately with ice water, beat after each
addition. Bake in 2 paper lined 9x1 1/2 round pans on moderate
350ºF. oven for 30 - 35 minutes or until done. Frost
cooled cake with Chocolate Satin frosting
