Marks Carrot Cake 1 cup of all purpose flour 1 teaspoon of baking soda 2 teaspoons of baking powder 1 teaspoon of cinnamon powder 1/2 teaspoon of salt 1/2 cup of vegetable oil 1 cup of white sugar 2 1/2 cups of grated carrots 1/2 cup of chopped walnuts

Instructions:
Sift & mix the flour, baking soda, baking powder, cinnamon & salt. Add the oil & sugar. Mix well. Stir in the carrots & walnuts. Ensure that all is well mixed. Transfer to a floured & greased cake tin approx. 20 cm X 20 cm. Bake at 350ºF. for about an hour or until a knife inserted in the centre of the cake comes out clean. Cool for a few minutes on a wire rack. Turn out & let cool completely.
