Pesach Streusel Apple Cake
 
 6 Tart apples, peeled and  chopped
 4 tablespoons Lemon juice
 2 teaspoons Cinnamon
 3/4 cup Sugar
 1 pinch Nutmeg
 6 Eggs
 1 1/2 cups Sugar
 1 teaspoon Vanilla extract
 3/4 cup Oil
 2 cups Pesach cake meal
 2 tablespoons Potato starch
 1/4 teaspoon Salt
 Streusel Topping
 1/4 cup Sugar
 1 1/2 teaspoons Cinnamon
 1/4 cup Chopped nuts

Instructions:

Source:" Classic Kosher Cooking " by Sara Finkel Toss apples with lemon juice. Mix together cinnamon, sugar and nutmeg, and combine with apples. Set aside. Beat eggs until light and fluffy, slowly adding sugar and vanilla extract. Stir in oil, cake meal, potato starch, and salt. Put half of batter into a greased,9x13 inch baking pan. Spread apple mixture on top. Cover with remaining batter. Combine streusel ingredients, and sprinkle on top of batter. Bake in a preheated oven at 350ºF.  for 1 hour,10 minutes. >From Judy down under in Australia where we too are getting ready for Pesach.
