7-Grain Oatmeal Cake Recipe

7-Grain Oatmeal Cake
 
 1 cup of AM Canola Oil
 2 cups of maple syrup
 1 1/2 teaspoons of vanilla
 2 cups of AM Unbleached White Flour
 3/8 cup of AM Soy Flour
 1/2 cup of cold water
 1/2 cup of soy milk
 1 1/2 teaspoons of grated lemon rind
 1 1/2 teaspoons of Sea salt (optional)
 3 Egg whites
 2 teaspoons of cinnamon
 2 teaspoons of non-alum baking powder
 1 cup of cooked AM 7 Grain Cereal
 5 cups of AM rolled Oats
 1/2 cup of raisins (optional)
 1/2 cup of chopped nuts

Instructions:

Mix well and fill oiled cake pan 3/4 full. Bake 350ºF.  until light golden brown. This is not a very sweet cake. May be served with apple butter, honey, etc.
