Harvest Cookies 1/3 cup Vegetable Oil 1 large Egg 1 cup Squash, cooked, mashed 1 1/2 cups Unbleached White Flour 1/2 teaspoon Baking Powder 1 teaspoon Nutmeg 1/2 teaspoon Cinnamon 1 1/2 cups Dates, finely chopped

Instructions:
Beat together oil, egg, and squash. Add flour, baking powder and spices. Beat well; stir in dates. Drop batter by small teaspoonfuls onto lightly oiled baking sheets. Bake at 350ºF. degrees for 10 minutes or until firm to the touch. Cool on wire racks.
