Zucchini Cookies

Zucchini Cookies

1/2 cup of Butter, softened
1 cup of Sugar
1 Egg, beaten
2 cups of flour
1 teaspoon of Soda
1/2 teaspoon of Cloves
1 teaspoon of Cinnamon
1/2 teaspoon of salt
1 cup of raisins
1 cup of chopped nuts
1 cup of grated zucchini

Instructions:

Cream sugar, butter and egg until fluffy and well blended. Sift dry ingredients together and add to the mixture with grated zucchini, blending well. Stir in raisins and nuts. Drop by teaspoonful onto greased cookie sheet. Bake at 375ºF.   for 12 to 15 minutes or until done. Do not overbake. Makes 3 dozen cookies. Randy Rigg
