Mint Meringues

Mint Meringues
 
 2 egg whites
 2/3 c. sugar
 Green food coloring
 1 pkg. mint chocolate chips
 
 Preheat oven to 375ºF.  Beat egg whites and add sugar and food coloring until stiff peaks form. Fold in chips. Drop by teaspoonfuls on ungreased cookie sheet. Turn off oven. Put cookies in oven and leave overnight.
