Ice Cream Parfaits
 
 6 Archway Home style cookie (chocolate chip icebox, pecan icebox, hard sugar, rocky road, chocolate chip & toffee), crunched
 1 tbsp. sugar
 1 pt. ice cream
 4 tbsp. (1/4 c.) butter, softened
 
 Mix together the cookie crumbs, sugar and softened butter with a fork or pastry blender. Alternate layers of these crumbs and scoops of ice cream in parfait dishes. Freeze. Garnish (if desired). Makes about 4 servings.
