Grandma's Supreme Lemon Pie
1 baked 9" pie shell grated rind of 1 lemon juice from one lemon dash of salt 1 cup of sugar 1 cup of water 1 heaping tablespoon of cornstarch 3 eggs, separated 6 tablespoons of sugar 2 tablespoons of butter
Instructions:
Combine sugar, salt, and lemon rind with water and bring to a boil. Mix the cornstarch with a small amount of cold water and add to boiling mixture. Add butter and cook until thick. Beat 3 egg yolks and mix with the lemon juice. Stir in egg yolks/juice to the boiled mixture. Pour into baked, cooled pie shell and bake one hour at 350ºF. Beat the 3 egg whites with 6 tablespoons of sugar until stiff. Spread over baked lemon and return to oven for a few minutes to brown and set. Serves 6
