Swedish Baked Rice Pudding (5 Pts) RICE MIXTURE 1/2 cup of uncooked regular long grain rice 2 tablespoons of sugar 2 cups of milk 1 tablespoon of margarine or butter PUDDING 6 eggs 1 cup of sugar 1/2 teaspoon of cinnamon 1/4 teaspoon of salt 1/4 teaspoon of nutmeg 1/2 cup of raisins 2 cups of milk

Instructions:
This traditional Swedish pudding bakes into three luscious layers. In medium saucepan, combine all rice mixture ingredients. Bring to a boil. Reduce heat to low; cook uncovered 20 to 25 minutes or until creamy, stirring occasionally. Remove from heat; cool slightly. Heat oven to 350ºF. Lightly grease 8-inch square (1 1/2-quart)baking dish. In large bowl, beat eggs; stir in remaining pudding ingredients and rice mixture. Pour into greased dish. Bake at 350ºF. for 55 to 60 minutes or until set. Serve warm or cool. If desired, pour whipping cream over each serving.
