| Pineapple Vanilla Wafer Dessert
1 box vanilla wafers, crushed Filling: 3 egg yolks 2/3 cup of sugar 1/2 cup of melted butter 1 can of crushed pineapples, drained 1 cup of finely chopped pecans
Instructions:
Cream the egg yolks and sugar. Add the butter and let cool. Add the pineapple and pecans. Put a layer of crushed wafers (1/3 of the box) in the bottom of a greased 8" by 8" cake pan. Cover with a layer of the filling (1/2 of the filling). Cover with another layer of the crushed wafers (1/3 of the box), then a layer of the remaining half of the filling. Finish with a layer of the remaining 1/3 box of crushed wafers. Chill in refrigerator several hours, or overnight. Cut into squares, top with whipped cream, and serve. Serves 12
